Pineapple cake bars are a delightful fusion of tropical sweetness
Ingredients:
- 1 cup crushed pineapple (drained)
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- Optional: 1/2 cup chopped nuts (such as walnuts or pecans)
For the Frosting:
- 8 oz cream cheese, softened
- 1/2 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 teaspoon vanilla extract
Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- Prepare Pineapple:
- Drain the crushed pineapple well to remove excess liquid.
- Make the Cake Batter:
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Fold in the crushed pineapple and nuts (if using).
- Bake:
- Spread the batter evenly into the prepared baking pan.

- Make the Frosting:
- While the cake is baking, prepare the frosting. In a mixing bowl, beat together the softened cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
- Cool and Frost:
- Allow the cake to cool completely in the pan on a wire rack.
- Once cooled, spread the cream cheese frosting evenly over the top of the cake.
- Cut and Serve:
- Cut the cake into bars, and they are ready to be served.
